It's what's for dinner

So I know no one asked my crazy ass to share recipes, but in addition to binge drinking and spending more money than I make, I am pretty good at cooking. Here is a quick step by step for the super easy eggplant roll ups I made the other night. They are almost as good as fruit roll ups and probably a little healthier.

Is it weird that I've never tried eggplant? I kind of want to try this out though.. Goat cheese is my ultimate cheese and I freaking love cheese

Um yes! I've never made eggplant , but just had it over the weekend at an Indian restaurant and it was heaven in my mouth.

If you're really into eggplant you'll finds it's kind of the chameleon of veggies. It can take on the flavors of any old marinade you like, from super savory to sickening sweet.

Think of it as a sort high fiber vodka. It mixes with anything.
